Turns out most breakfast sausages have sugar in them, which is probably why they’re awesome. This recipe isn’t quite the same as Jimmy Dean, but it’ll get you through your 30 days.
I mean, it’s meat with a bunch of spices. It doesn’t have quite the same texture as packaged sausage and it ends up being more like a spicy pork burger than anything else. But it’s Whole30 compliant and it goes well with eggs, so I’m not complaining.
A few notes:
- My ground pork comes in packages between 1-1.25lbs. Whatever. Just use the same amount of spices. I wouldn’t worry about adjusting things until you get north of 1.5lbs.
- I added cayenne and crushed red pepper. If you don’t like spicy things, I guess you can remove them, but where’s the fun in that?
- You can also boost the fennel to 1 tsp if you’re feeling extra frisky.
